Don't fret! Crystallization is a natural process.
Scientifically speaking, it happens when the glucose in honey precipitates out of the liquid honey. Different honeys will crystallize at different rates, and a few don't crystallize at all!
If your honey crystallizes, simply place the honey jar in a hot water bath until the crystals dissolve.
To prevent crystallization, store your honey at room temperature (never in the fridge).
